VEGETARIAN OKONOMIYAKI (Japanese Pancake)

120g oat flour
30g spring onions (trimmed and sliced)
250g cabbage (shredded)
¼ cup water
1 tsp. soya sauce
1 tbsp. mayonnaise
3 tbsp. ketchup
1 tbsp. Worcestershire sauce
1 tbsp. soya sauce
*Mix until it’s evenly combined
Whisk the eggs and oat flour together until smooth. Add the spring onions, cabbage, soya sauce, and water. (Keep a handful of spring onions on the side for garnish).
Heat the oil in a small frying pan and pour the batter. Cook and cover over medium heat for 5-8 minutes, flipping to evenly cook both sides. Tip: Insert a skewer to ensure it’s thoroughly cooked.
Transfer the Okonomiyaki to a plate and drizzle the sauce.
Garnish with spring onion and mayonnaise (optional).
