¼ cup coconut oil OR olive oil
½ cup honey OR sugar
2 ripe bananas (mashed)
1 ripe banana (chopped)
½ tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla essence
1 cup oat flour
¾ all purpose flour
Preheat the oven to 165°C and grease a loaf pan.
In a bowl beat the oil and honey together with an electric whisk. Add the eggs and mix well.
Add the baking soda, baking powder, vanilla essence, cinnamon, oat flour, flour and blend.
Lastly switch to a spatula and stir in the mashed bananas.
Place the batter in a greased pan and top it with a chopped banana, walnuts, and bake for 30 minutes.
